After working with farmworkers for about 6 months in DC I have been embracing whole, pesticide free, worker safe, child labor free foods whenever I can. What I have learned is that delicious, healthy foods are available, inexpensive, easy to find in this city and so fun! I am going to write more and more about how I have been using organic things for delicious meals, beauty products and cleaning supplies! I am still experimenting, so I will include my successes and failures! I will also include posts about delicious foods that I didn’t make. So watch out! It will be delicious overload!
So here it is:
Yummy Summer Salad
This is a quick and easy recipe to bring along to dinner parties, picnics or a simple side for chicken or fish!
You will need:
- as many delicious heirloom, pesticide free, maybe even home grown tomatoes as you can get your hands on (to learn more about slavery and toxicity in the conventional tomato business check out the new book Tomatoland by Barry Estabrook)
- red or white onion
- avocado (technically getting conventional avocados is ok- they tend to be pretty pesticide free for the consumer, but if you keep the famworkers in mind who grow these delicious super foods, go the organic route)
- a couple of limes
- frozen corn
